VEGGIE SPRING ROLLS

Ingredients (for 12 rolls):

For the spring rolls:

  • 115 grams of rice vermicelli
  • 2 carrots
  • 1/2 cucumber
  • 12 rice cakes of 22 cm
  • 6 lettuce leaves, washed and drained
  • About thirty peeled northern shrimps
  • A sprig of mint

For the sauce:

  • 2 tablespoons of peanut butter
  • 2 tablespoons of soy sauce
  • 2 tablespoons of rice vinegar
  • 2 tablespoons of honey
  • 1 tablespoon sesame oil
  • Half a lime
  • A handful of roasted peanuts
  • 2 cloves of garlic
  • ORIGINAL FURIFURI

Preparation steps:

  1. First prepare the sauce: mix all the ingredients in a bowl and set aside to cool.
  2. Cook the rice vermicelli according to the instructions and drain well.
  3. Peel your carrots and cucumber (if they are not organic) and cut them into thin julienne strips.
  4. Rehydrate your rice paper. Place them on a damp cloth.
  5. Assemble your rolls: a lettuce leaf, a handful of vermicelli, a little cucumber, a little carrot, and 3 shrimp. Fold.
  6. Dip in your sauce and enjoy!
