SICHUAN-STYLE EGGPLANT

Ingredients (for 2 people):

  • 2 eggplants
  • 1 tablespoon of FURIFURI LEMON
  • 60 ml sunflower oil
  • 60 ml of water
  • A piece of ginger
  • 2 green onions
  • 2 tablespoons of sesame oil

For the hot sauce:

  • 2 tablespoons of red curry paste
  • 2 tablespoons of soy sauce
  • 1 tablespoon of rice wine (optional)
  • 1 tablespoon of brown sugar
  • 2 tablespoons of rice vinegar
  • The juice of one lemon
  • 2 tablespoons of FURIFURI LEMON

Preparation steps:

  1. Start by washing the eggplants and cutting them into small cubes. Then let them drain for 15 minutes in a slotted spoon. Pour FURIFURI LEMON over the top.
  2. In a sauté pan, add the eggplant pieces, water, and sunflower oil. Cook until the eggplant is cooked through and slightly caramelized.
  3. Meanwhile, prepare your hot sauce, mix all the ingredients.
  4. Peel the garlic and ginger and grate them.
  5. Add the sauce, ginger and garlic to your cooking and let it cook for another 10 minutes.
  6. Serve with rice, adding a few onion rings and our LEMON FURIFURI.
