Kei is a chef with a curiosity for everything... He was particularly interested in salt in traditional southern recipes: " In the past, dishes contained little salt because it was an expensive ingredient ," he explains. Over time, it has become widespread and democratized, to the point where today we tend to be too heavy-handed. Our brains have, in fact, integrated the salty taste as pleasant.

When we add salt to a dish, sometimes even without having tasted it, it is as if we were trying to rediscover a taste of yesteryear that had become ingrained in us without us realizing it.
