
ADOPT SLOW HEAT COOKING AND DANCE MORE!
On average, we consume twice as much salt every day . However, it's not easy to use a lighter hand because our palates are used to the salty taste.
🗝️ One of the keys to using less salt is surprisingly to play with cooking times: cooking food over lower heat for longer.
Kei Matsushima, chef of a gourmet restaurant in Nice and specialist in umami taste, tells us why: "The ideal when cooking meat, fish or vegetables in a pan is to cook them over very low heat, without overcooking them. Indeed, high heat causes the food to lose its flavor, which then forces us to add more salt to compensate. Learn to take the time to cook gently."
Excessive salt intake on a daily basis also causes the brain to overheat. This leads to a tendency to get angry. "Over-seasoning your food isn't good for your health. To feel calmer and more relaxed, I recommend focusing on umami, the fifth taste found in furikake ," Kei continues. According to him, umami in food helps you gain energy.
"And during the long cooking times, don't hesitate to... dance. FURIFURI means to shake, and in Japan, it evokes a little dance!"
